A traditional deep fried Mangalore snack made with maida,curd and Baking powder.It is usually served with coconut chutney.
- All purpose flour - 1 cup
- Yogurt - 1/2 cup
- Green chillies - 2 chopped fine
- Cilantro - 1 tbsp chopped fine
- Ginger - 1/2 tsp chopped fine
- Baking powder - 1/2 tsp
- Baking Soda - 1/2 tsp
- Sugar - 1 tsp
- Salt - to taste
- Hing/asafotida - a pinch
- Oil - to deep fry
Mix all the ingredients together except Oil into a smooth mixture.The consistency should be that between Dosa batter and chappathi dough, very similar to Uzhunnu vada batter, you should be able to hold it with your hand and drop into hot oil.
Heat oil in a heavy bottomed pan.Pinch out small portions of the batter with your hand and drop into oil.Cook on low to medium heat until golden brown.
Remove and drain on paper towels.
Serve hot with coconut,peanut or tomato chutney .
