My version of Stuffed Brinjal Masala
Ingredients for the masala
Onion - 2.
Tomato - 1.
Hand full of cashews,
3 cloves of garlic,
meat masala crushed,
2 tbsp coconut.
2 tbsp corriander powder,
1 tsp chilly powder .
To prepare the Masala
Roast the onion,garlic and tomato with a little oil until it is translucent, add in the rest of the ingredients and fry until raw smell goes.Add salt to taste. Blend this whole mixture until smooth.
To Stuff the Brinjal/eggplant
Make slits of the brinjal leaving the stems intact .Stuff the brinjal with the masala.
Shallow fry the brinjal in a little oil for 10 -15 minutes .
Add in the rest of the ground masala and a glass of water and cook until the brinjal is well cooked and soft ,saute until gravy is thick.
Goes well with rice or chappathi. Usually this is made with peanuts. Hubby is not too fond of peanuts so I use cashews instead
.
