Pavakka Achar / Bitter Gourd pickle


Ingredients:
  1. Bitter gourd - 2 large cut into thin strips
  2. Green chilies - 8 cut into rings
  3. Vinegar - 1/2 cup
  4. Mustard seeds - 1/2 tsp
  5. Ginger - 1/2 tsp chopped
  6. Garlic - 5 cloves
  7. Curry leaves - 1 spring
  8. Oil - 1 tbsp
  9. Salt - to taste

Method:
Heat oil in a pan and splutter the mustard seeds.
Add in the chopped green chillies,ginger, garlic and curry leaves and saute for a minute.
Add in the sliced bitter gourd and salt to taste and saute for 3 or 4 minutes.
The bitter gourd should only be slightly cooked and should retain a crunch.
Add in the vinegar and salt to taste and 1/4 th cup water and bring to a boil and turn off the flame immediately.
