Ingredients:
- Onion - 1 sliced
- Eggs - 6 hard boiled
- Tomatoes - 1
- Green chillies - 4
- Coconut Milk - 1.5 cup
- Coriander powder - 2 tsp
- Turmeric powder - 1/2 tsp
- Curry laves - 1 spring
- Garlic - 1 clove chopped
- Oil - 2 tbsp
- Potatoes - 1 cubed
- Masala crushed- 2 cardamoms,1/2 tsp fennel,1/4 th tsp pepper,small piece of cinnamon, 2 cloves
Method:
Heat oil in a pan and saute the curry leaves ,onion , garlic and green chilly .
Add the coriander and turmeric powder and saute until raw smell is gone.
Add in tomatoes and saute until tomatoes are cooked.
Add in the crushed masala and saute.
Pour in 1/2 cup water and salt to taste and add the cubed potatoes.
Cover and cook until potatoes are soft.
Add in the peeled hard boiled eggs(you can cut it in 2 and add or add whole)

Add the coconut milk and bring to a simmer.
Adjust seasonings and turn the flame off.
