Beer Battered Onion Rings

Ingredients:
  1. Onion - 2 large ,pick perfectly round ones.
  2. All purpose flour /maida - 1/2 cup
  3. Cornflour - 1/2 cup
  4. Chilly powder - 1/4 tsp
  5. Salt - to taste
  6. any brand of light Beer - 3/4th cup ( you can substitute with club soda if you dont have beer)
  7. fresh bread crumbs - 2 cups (process a few days old bread in a mixie/food processor)
  8. Oil - to deep fry

Method:
Peel the onions and cut into rings about 1/2 inch thick.
separate the rings and keep aside (keep the innermost small rings for another use).
Sprinkle 2 tbsp of the all purpose flour on the onion rings and leave aside.
Add the all purpose flour, cornflour, chilly powder and salt to taste into a mixing bowl and combine the dry ingredients.
Slowly add in the beer and mix well until you get a batter that coats the back of the spoon.Almost like a dosa batter.
spread the breadcrumbs on a platter.
dip each onion ring into the beer batter , let the excess drip off and then coat it with fresh breadcrumbs and leave it on a wire rack or plate.
Repeat the process for each onion ring and keep aside.
Heat oil to deep fry.
Add onion rings and fry until golden brown ( 1 - 1.5 minutes)
Drain on a wire rack . These stay super crisp even after 15 minutes.
