Meat Packet / Kerala Meat rolls




 












Ingredients:
For the filling -You can use any dry preparation for the filling like chicken , cutlet mix, vegetables etc.I have used Beef.
  1. Beef - 1 lb cut into thin pieces or cubes
  2. Shallots - 6 chopped
  3. Crushed pepper - 1/2 tsp
  4. Green chillies - 3 chopped
  5. chilly powder - 1 /2 tsp
  6. Turmeric powder - 1/2 tsp
  7. vinegar - 1 tsp
  8. ginger - 1/2 tbsp chopped
  9. garlic - 5 cloves chopped
  10. curry leaves - 1 spring
  11. Oil - 1 tsp

For the covering-
  1. Maida - 1 cup
  2. Milk - 1 cup
  3. Egg white - 1
  4. Sugar - 1 tbsp
  5. salt - to taste
  6. oil - as needed to smear on the pan.

You will also need -
  1. Bread crumbs - 1.5 cups
  2. Egg whites - 2 beaten
  3. Oil - to deep fry the meat packets.

Method to prepare the meat mixture:
Marinate the meat with salt, turmeric powder, vinegar and pepper powder .
Cook the meat either by sauteing or pressure cooking depending on the cut of meat you choose.
Shred the meat in a food processor OR you could use ground beef (The texture of ground beef is not very suitable for this recipe so it is better to shred the meat)
Add oil to a pan and saute the ginger,garlic,green chillies,curry leaves and chilly powder until the shallots wilt.
Add in the shredded meat and fry until the mixture is dry. Taste for salt and spices and keep aside to cool.

Method to prepare the covering:
Make a batter out of maida/all purpose flour, milk,sugar,salt and egg white without forming lumps.
Heat a nonstick frying pan and smear with oil .
Make small crepes about 6 inches in diameter and keep aside.
Reserve 4 tbsp of the batter to use when forming the packets.

Method to form the packet and fry it:

Lay each crepe on a flat surface and arrange a tbsp of meat filling on one end .
Roll it tightly so that it resembles a cigar using the reserved batter as glue to hold the crepe together.
Dip each of the rolls in beaten egg white and roll in the breadcrumb mixture(like cutlets) and keep aside.
Deep fry the meat packets in hot oil until golden brown, since everything is cooked we only need to brown the packets.
Serve with ketchup.
