Ingredients:
- Nadan kozhi/Free range chicken - 1 small
- Coriander powder - 2 tbsp
- Chilly powder - 1 tbsp
- turmeric powder - 1/2 tsp
- Green chillies - 4
- Garlic - 10 cloves chopped
- Ginger - 1 inch piece chopped
- Onion - 1 chopped
- Meat masala - 1 tbsp crushed(cinnamon,fennel,cardamom,cloves,pepper)
- Coconut slices - 1 /4 cup
- Vinegar - 2 tbsp
- salt - to taste
- Shallots - 5 sliced
- Curry leaves - 4 springs
- Oil - 2 tbsp
Method:
Add the following ingredients into a pressure cooker - washed and drained chicken pieces along with Coriander powder,Chilly powder,turmeric powder,Green chillies ,Garlic ,Ginger,Onion,Meat masala ,Coconut slices,Vinegar and salt - to taste. Mix well and add 1/4 cup water close the pressure cooker and cook for 10 whistles.
Turn the flame off and let the pressure release by itself.
Open the cooker and if there is more gravy bring the flame back on and cook until the mixture is almost dry.
Heat oil in a frying pan and add the curry leaves and sliced shallots and fry until light brown.
Add in the cooked chicken and stir fry until dry and slightly browned.
NOTE: If you are using broiler chicken do not pressure cook. Just cook as you normally would in a pan .Free range chicken is less meaty, has less fat ,takes much longer to cook and tastes much better than broiler chicken.
