Spicy Masala Biscuts

I remember having these cookies/biscuts from Sheen bakery in Kannur.I am not sure if this is a Malabar specialty ,haven't found it anywhere else.These pair well with a hot cup of tea or coffee when you crave for something light and spicy
I have used the basic cookie recipe and added ingredients to make it spicy.It is a perfect balance of slightly sweet, salty and spicy .

















Ingredients:
  1. Self rising flour - 1 and 3/4 cups OR All purpose flour - 2 cups + 3/4 tsp baking soda + 3/4 tsp baking powder + 1/2 tsp salt.
  2. Green chillies - 4 chopped
  3. Ginger - 1/2 tsp grated
  4. Nigella /Kalonji  seeds - 1/2 tsp
  5. Pepper powder - 1/2 tsp
  6. chilly powder - 1/4 tsp
  7. garam masala - 1/2 tsp
  8. Cashew nuts - handfull broken
  9. Butter - 1 stick (4 oz / 8 tbsp)
  10. Egg - 1
  11. Sugar - 2 tbsp (increase to 4 or 5 tbsp if you like it  sweeter, I would add 4 tbsp next time)
  12. Corriander leaves - 1 tbsp chopped
  13. curry leaves - 1 stalk

Method:
Heat the Oven to 375 degree Farenhiet.
Beat the butter , sugar and egg well.
Add in the dry ingredients and mix to a soft dough. If it is too dry you can add a bit of water to help mix.
Roll the dough out (1/2 cm thickness)
Cut into into any shape you choose.
Sprinkle extra Nigella seeds on top .
Bake on a tin sheet for 12 - 15 minutes until light brown.
Cool and store .

  2. Priya Chechy, this used to be a firm favourite in your house and ours too! I clearly remember muching on these whenever I came to Peramma's house for lunch during school days! :)

  5. If you bake them well enough so that all the moisture is gone , I am sure they will stay fresh at room temperature for at least 3 - 4 weeks.
