Fried Plantain with Ghee and Sugar

Fried plantain is a very popular dish in Jamaica and Ghana. In Kerala the Pazhampori/Ethakka appam takes precedence over fried Plantain. For me this is the best way to enjoy a ripe plantain - specially when some pieces are deliberately charred to a darker shade that comes very close to getting burnt, they are perfect that way.The Ghee and Sugar makes it moist ,melt in your mouth, sweet crunchy....and sinfully delicious.

Ingredients:
  1. Ripe Plantains - 2
  2. Ghee/Clarified butter - 2 tbsp
  3. Sugar - 2 tsp
Method:
Peel and cut the Plantain into 2.
Slice each half into 3 pieces horizontally.
Heat Ghee in a nonstick pan and add the Plantain slices and fry on medium flame until slightly browned.
Sprinkle with sugar while still hot.
