Crown Pizza

Ingredients :
  1. Maida /All purpose flour - 3 cups (+ 1/2 cup as required)
  2. Yeast - 2 tsp
  3. Sugar - 1 tbsp
  4. Olive oil - 3 tbsp
  5. salt - 1 tsp
  6. Water - 1 and 1/4 cup

Method :

slightly warm the water (not hot , just warm .If you have it hot it will kill the yeast)
Add sugar and yeast and keep aside for 5-10 minutes to allow the yeast to foam.
The dough raises to double quantity , so in a big bowl add the maida and salt and stir.
pour in the yeast mix and oil and knead to form a very soft dough.add more flour as needed ( the dough should be just past the sticky stage and not hard, so do not add more flour than necessary) Allow to raise at least for 1.5 hours , you can let it stay for upto 4 hours.
Punch the risen dough down and roll out on your pizza pan to 1/4th inch thick disc dusting with flour as needed. Leave it on the pizza pan for 15-30 minutes - It would have slightly risen now.
Brush the pizza sauce leaving 1/2 inch off the sides ,sprinkle grated cheese (mozerella, cheddar or a mix of cheeses as you prefer) Add toppings of your choice and bake at 220 for 15 minutes.
If you are adding veggies that have moisture content - and you prefer a crispy pizza rather than a soggy one ,saute or grill your toppings.

NOTE : For Crown Pizza the base and toppings are the same , the way you fold the base is the only difference .
1. Roll out the dough into a circle
2. mark the dough into wedges just how you would slice a pizza - do not cut all the way through  and stop few inches from the edge.
3. Arrange the pizza sauce ,vegetables and cheese along the outer edge of the pizza dough.
4. Fold over the sliced portion from the center towards the edge and tuck it in .
5.Bake , you can brush the top with egg wash for a shiny crust if desired.
