Achinga payar thoran /Yard long beans stirfry

I got a hand full of beans and yard long beans from the garden.There wasn't enough to make a curry by itself. So both of them were combined and cooked together.

  1. Achinga payar/ yard long beans - 2lbs cut into small pieces
  2. Grated coconut - 1/2 cup
  3. Shallots - 3
  4. Green chillies - 5
  5. Curry leaves - 1 spring
  6. Turmeric powder - 1/4'th tsp
  7. Salt - to taste
  8. Garlic - 1 clove
  9. Oil - 1 tsp


Heat oil in a pan and add the mustard seeds.
When it splutters add the curry leaves and the turmeric powder ,chopped onion,green chilly and garlic.
Stir fry for a minute.
Add in the Achinga beans and stir fry for 2 minutes.
Add salt to taste and grated coconut Cover and cook for an additional 5 minutes until the beans is cooked but still retains a crunch.
