- Achinga payar/ yard long beans - 2lbs cut into small pieces
- Grated coconut - 1/2 cup
- Shallots - 3
- Green chillies - 5
- Curry leaves - 1 spring
- Turmeric powder - 1/4'th tsp
- Salt - to taste
- Garlic - 1 clove
- Oil - 1 tsp
Method:Heat oil in a pan and add the mustard seeds.
When it splutters add the curry leaves and the turmeric powder ,chopped onion,green chilly and garlic.
Stir fry for a minute.
Add in the Achinga beans and stir fry for 2 minutes.
Add salt to taste and grated coconut Cover and cook for an additional 5 minutes until the beans is cooked but still retains a crunch.
