Squid with chilly and blackbean sauce



I have always wondered how the restaurant folks cut the squid to make it look so fancy. I have tried it myself and it wasn't difficult at all. You need a good sized specimen to work with. First you need to cut the cleaned squid into rectangular pieces , then lay each piece flat on the cutting board and cut them halfway through into a criss cross design . The incision should go half way into the squid but don't cut it all the way through.


Ingredients:

1 lb squid (clean and cut)
5 cloves garlic ( minced)
2 tbsp black beans with chilly paste
1/2 tbsp sugar
Soy sauce
1 red pepper sliced
5 Green chillies sliced at a diagonal
1 large onion sliced
2 tbsp oil


Method:

Heat the skillet or wok at high heat with oil,add in garlic and black beans,fry until fragrant.Add in the cleaned squid,fry for 3 minutes until it's curled up ,add in all the cut vegetables ,soy sauce ,sugar and salt.Stir-fry for another 2 minutes,adjust the seasoning to your taste before remove from heat.Serve warm with rice.
