- Chena /Elephant Yam - 250 gms approximately 2 cups cleaned and cut into cubes
- Shallots - 5 crushed
- Dry red chillies - 2 broken
- Chilly powder - 1/2 tsp
- turmeric powder - 1/4 tsp
- pepper powder - 1/4 tsp
- garlic - 3 cloves crushed
- curry leaves - 2 springs
- mustard seeds - 1/2 tsp
- coconut oil - 3 tbsp
- salt -to taste
Add the yam, chilly powder, turmeric powder, salt to taste and enough water to cook the yam into a pan and cover and cook until the yam is tender.
You can do this in a pressure cooker (cook for one whistle and turn the flame off).
Heat oil in a frying pan and add the mustard seeds.
When it splutters add the crushed shallots, garlic,dry red chillies and curry leaves and suate until it starts to brown slightly.Sprinkle pepper powder and stirfry for a minute.
Add in the cooked yam and stirfry until dry .
Serve with rice.
