Pavakka/Bitter gourd Thoran


Ingredients :
  1. Pavakka /Kaipakka/Bitter gourd/Bittermelon - 2 seeded and chopped into fine pieces
  2. Onions - 2 chopped fine
  3. Green chillies - 6 cut into rings
  4. Grated coconut - 1 cup
  5. Mustard seeds - 1/2 tsp
  6. curry leaves - 1 spring
  7. Oil - 1 tbsp
  8. Salt - to taste)
  9. Tamarind - a bit (optional - adding tamarind reduces the bitterness)

Method:
Heat oil in a pan and add the mustard seeds.
When it splutters add the green chillies, curry leaves and onion and saute until translucent.
Add in the bitter gourd pieces , tamarind juice if you are using it and salt and cover and cook for few minutes.
Open the pan and check if there is water - if there is then stir fry int open pan until most of the water is gone and add the grated coconut.
Cover and cook until done.
