Mashed Potatoes

  1. Red potatoes - scrubbed well and keep part of the skin on and cut into quarters.
  2. heavy cream or half and half - 1/4'th cup
  3. Butter - 4 tbsp
  4. Salt - to taste
  5. pepper powder - to taste
Place potatoes in a saucepan adding enough cold water to cover them by 1 inch. Bring to a boil add salt lower heat and simmer until potatoes are soft.
Drain the potatoes return them to the saucepan and heat over very low heat to dry up all the water content.
Add in the cream and half of the butter and pepper powder and Coarsely mash the potatoes.Add in remaining butter and mix again.Sprinkle with paprika or Cajun spice mix and serve hot.

I don't like my mashed potatoes very smooth and prefer a slight lumpy texture.
