  1. Urud dal - 1 cup soaked in water for 5 hours
  2. Rice flour / Rice - 3 cups (If using rice Soak in water overnight)
  3. Salt - to taste

Grind the Urud dal with minimal water until it is fluffy.
Grind the soaked rice well( it is okay if it is a bit coarse).
If you are using rice flour mix the urad dal batter and rice flour with enough water to form a thick batter.
Mix the dal and rice batter with salt and keep in a covered vessel to ferment.
I usually leave it overnight to ferment .

The batter would have doubled in size when it is fermented.
Heat water in a pressure cooker or idili steamer.
Grease idili mould and spoon in the batter and steam for 15 - 20 minutes.

Serve with Sambar and chutney.
