- Raw plantain - 3 outermost skin removed and cut into long thin pieces(keep this immersed in cold water otherwise it will turn black)
- Mustard seeds - 1/2 tsp
- Dry red chillies - 5 crushed
- Shallots - 5 crushed
- garlic - 4 cloves crushed
- turmeric powder - 1/2 tsp
- salt - to taste
- curry leaves - 2 springs
- Oil - 3 tbsp
Cook the plantain with turmeric and salt with a little water added until it is 3/4th cooked.
There should not be any water remaining.Don't add too much water - if you do then the plantain gets over cooked and starchy.
Heat oil in a non stick pan(you need more oil than regular stir fry).
Add the mustard and when it splutters add the crushed garlic,onion,red chilly and curry leaves and saute until light brown.
Add in the cooked plantain and stir fry on a medium low flame until it is fried well and some parts get crunchy.
