- Beetroot - 3 peeled and cut into long thin strips
- I had a small piece of leftover red bell pepper and half of a carrot so I added those too.
- Onion - 1/2 chopped
- garlic - 3 cloves chopped
- green chillies - 3 slit
- black pepper -1/4 tsp crushed coarsely
- Oil - 2 tbsp
- salt - to taste
- vinegar - 1/4 tsp
- mustard seeds - 1/4 tsp
- curry leaves - 1 spring.
Heat oil and add the mustard seeds.
When it splutters add the onion,garlic,green chillies and curry leaves and fry for a minute.
Add in the beetroot and salt to taste , add the vinegar and cover and cook in steam until the beetroot is cooked.
Add in the crushed black pepper and stir fry in an open pan until it is fried well.
