Carrot & Tomato Pachadi

  1. carrots - 5 (peeled and grated)
  2. tomatoes - 2 (chopped -optional)
  3. Curd - 3 cups
  4. Green chillies - 7 cut into rings
  5. Onion - 1/2 of 1 chopped
  6. Mustard seeds - 1/2 tsp
  7. dry red chilly - 2 broken
  8. curry leaves - 2 springs
  9. salt - to taste
  10. Oil - 1 tbsp.

Heat oil and splutter the mustard seeds.
Add in the chopped onion, green chilies and curry leaves and saute for 2 minutes.
Add in the grated carrots and chopped tomatoes and stirfry for another 5 minutes or until it is cooked.
Turn the flame off and let it cool down a bit.
Add in the beaten curd and mix well.Add more salt if required.
