I have been wanting to try Lotus root for a while now and found some fresh ones in the local store. They are very pretty to look at once peeled and sliced.Taste and texture wise it is very similar to potato. It turns Grey when exposed to air, has the same crunchy texture like a raw potato and doesn't have any strong flavor as such.It turns mushy when over cooked , it is best to stir fry them lightly so that they retain a slight crunch.
