Palappam



Ingredients:
  1. Basmati rice - 4 cups(soaked in water for 5-6 hours)
  2. Fresh grated coconut - 1.5 cups
  3. coconut milk - to grind(I use nestle coconut milk powder, the thicker the milk the better the taste)
  4. yeast - 3tsp
  5. Sugar - 1/2 cup
  6. cooked rice - 1 tbsp

Method:
Grind all of this into a smooth batter.Do not add salt while grinding .Salt should be added only the next day after it has fermented.The batter should be of looser consistency than dosa batter. In cold weather the batter may take more than a day to ferment.

To make Palappam:
You need the special palappam chatti .Pour 1 ladle full of batter into a medium hot pan and swirl it around cover and cook until done.
