Ingredients:
- Black Grapes / juice variety not the seedless kind- 1/4 kg
- Sugar- 1/2 Cup (increase of reduce depending on the sweetness of the grapes you are using)
- Water- 2 Cups divided into 1 cup (room temperature) + 1 cup (Keep to cool in the refrigerator)
Method:
Wash grapes and boil in 1 cup of water , as the grapes start floating up ,remove them with a slotted spoon and drop them into the 1 cup of reserved cold water .
With your fingers give each grape a slight squeeze and it gets separated from the skin and seeds.Keep the grape pulp aside to cool in the fridge and return the skins and 1 cup water with the sugar to the boiling pan and cook for another 5 minutes.
Strain this liquid and squeeze out the pulp from the skin with the back of a spoon.
When this cools down to room temperature , add the pulp you separated earlier and refrigerate until ready to serve , Check for sweetness and add more sugar if needed.
NOTE : I have seen some recipes that mention to boil the grapes and pulp together and that the pulp will get separated by itself - I have tried that and it didn't work for me , the pulp got overcooked and mushy ,So I pick the grapes out as soon as they float and reserve the pulp of 1/2 of the grapes and allow the remaining 1/2 to boil .
