Shrimp Skewers/ Chemeen eerkili kuthi varuthathu



Ingredients:
  1. Shrimp - 1 lb cleaned, deveined and tails left intact
  2. Chilly powder - 2 tsp
  3. Garlic powder - 1/2tsp
  4. pepper powder - 2 pinches
  5. Salt - to taste
  6. vinegar/lime juice - to taste
  7. coconut oil - 1 tsp
  8. curry leaves - 1 spring
  9. vegetable Oil - 5 tbsp(not included in the marinade)
Method:
Make a paste of all the ingredients except the 5 tbsp oil and apply on the shrimp and keep aside for 30 minutes.Heat oil in a non stick or cast iron frying pan .



you can shallow fry the shrimp in the pan or thread it on to bamboo skewers and fry it on a high flame until the shrimp is just cooked.Shrimp should not be overcooked , it becomes hard when cooked too long.

  2. Good one! And I totally agree with not overcooking which most of us end up doing. Great idea of skewing them and frying.
