Hard Boiled egg - 6.
Onion - 2 sliced (big).
Tomato - 1 sliced.
Chilly powder(kashmiri chilly powder gives colour without adding too much heat) - 1tsp.
Corriander powder - 1.5 tsp.
Oil - 4 tbsp.
Salt - to taste.
Heat a non stick pan and add oil.Add the sliced onions with salt and stir fry on high heat until the onion is wilted.Lower the flame and add in the corriander and chilly powder.saute for 30 seconds.Add tomatoes and saute on medium flame until the tomatoes are cooked .Add curry leaves and the hard boiled eggs and stir fry for a minute.
TIP : for the perfect boiled egg without the grey discolouration around the yolk.Start cooking the egg in cold water.Once it comes up to a boil lower flame and simmer for 7-8 minutes. Immediately immerse into cold water and then peel .
