Ingredients:
- Maida/All Purpose flour - 2 cups
- Water - enough to make batter
- Egg - 1 (optional)
- Salt - to taste
- Sugar - to taste
For the filling
- Grated coconut - 2 cups
- Sugar - to taste(around 1/2 cup or more depending on how sweet you like it)
- Crushed Cardamom - 2
Method :
Prepare the filling by mixing the grated coconut with sugar and crushed cardamom and keep aside.Mix the Maida,Beaten egg, salt and sugar with enough water to form a thin batter.
The batter should be thinner than dosa batter and without any lumps- you should be able to pour a ladle full of batter on a pan and swirl the pan to coat it.(If you are familiar with the consistency of crepe batter - it should be similar)
Heat a non stick pan and smear it with oil .
Pour a ladle full of batter and spread it on the pan .
Let it cook until the sides start curling up .
Turn and cook for another minute.
Lay this pancake on a plate and add a tablespoon full of coconut filling along 1 side.
Roll the pancake with the filling inside .
Serve as an evening snack .
