Chicken Rollup


I just made up the name chicken rollup ,based on the technique used to prepare this dish. It is a pure trial recipe which was based upon a recipe that I had seen once on Foodtv where they flatten and stuff beef with spinach ,cheese etc and then cook it in a tomato based gravy.
During weekends and almost always on a Saturday evening hubby comes up with a question - " What is special today ? ". Most often that not , I try to come up with something that is easy and quick to fix.
I used a chicken thigh and leg portion - removed the skin ,deboned it and then marinated the inside of the meat with some spices and stuffed it and rolled it up , steamed it wrapped in aluminium foil then sauteed it in a frying pan and cut it into slices.
Ingredients:
chicken leg and thigh attached deboned and skinned - 1(you can use chicken breast pieces instead , but dark meat is more moist and flavourful)
soy sauce - 1tsp
ginger/garlic paste - 1/2 tsp
pepper powder - 1/4'th tsp
chilly powder - 1/4'th tsp
siracha chilly sauce - 1/2 tsp
chopped onion - 2 tbsp
chopped tomatoes - 2 tbsp
Oil - 1 tsp
Method:
De bone and spread the chicken piece flat on a plate .
Apply soy sauce,ginger garlic paste,chilly powder and chilly sauce to the chicken piece and let it aside for 10 minutes.
Place the chopped onions and tomatoes inside the chicken(lay the chicken down on the plate such that the nicer looking side is touching the plate and you are putting your stuffing on the cut side.
Roll the chicken up and hold it in place with a toothpick if needed.
Roll this tightly in an aluminum foil .
Heat 1/2 cup if water in a small pan and place the roll into the water and cover and cook for 15 minutes .
When the chicken is cool enough to handle remove the aluminium foil and saute the chicken roll in a non stick pan until slightly browned.
Slice into 1/2 inch thick rounds and serve warm.
