Beetroot & Date Pickle

This is a pickle that is sweet , sour and spicy at the same time .It is usually served with Biriyani in Malabar weddings. That is where I first tasted this pickle.There is no cooking involved and it tastes best when used within 2 or 3 weeks.

Ingredients:
  1. Dates - 7 or 8 chopped lengthwise
  2. Beetroot - 2 small grated long
  3. Ginger - 1/2 tbsp grated
  4. Garlic - 2 cloves cut into 2
  5. Green chilies - 3 or 4 chopped
  6. salt & Vinegar - to taste
  7. Eastern pickle masala -1 tbsp
Method:
Mix all the ingredients together and store in a clean dry bottle.
