Ingredients :
- Milk - 2 litres (about 8 cups)
- **Kaima rice - 1/2 cup
- Condensed Milk - 1 tin
- green cardamom - seeds from 4 pods crushed
- Almonds - 8 soaked and sliced into fine slivers
- salt - 2 pinches
** You can use any variety of good quality raw rice like Basmati ,jeera , sona masuri etc . You get best results from a fragrant rice like Kaima ( the biriyani rice used in Malabar region)
Method:
In a large clean pressure cooker add the rice and milk and bring to a simmer.
Lower the flame and close the pressure cooker and put on the weight.
When the pressure builds up lower the flame to the lowest setting .
Cook for 45 minutes in the pressure cooker.
Allow the pressure to get released by itself .
Open the cooker , the rice should have cooked well now .
Add the condensed milk and salt and stir well.
Taste for sweetness.Add more sugar if you like it sweeter.
turn the flame back on and mix well until combined.
Add the almond slivers and cardamom powder.
Serve hot or cold.
