Cevapi

Cevapi is a Turkish dish of grilled minced meat.The meat is mixed with baking soda which makes it very tender.You can use ground beef or a mixture of ground beef,lamb,pork and chicken . Mixing the meats enhances the flavor.


















Ingredients:

  1. Ground beef - 1 lb
  2. Ground pork - 1 lb
  3. Medium Yellow onion - 1 minced
  4. Garlic - 4 cloves minced
  5. Parsley - 2 tbsp chopped
  6. Hot water - 1/4 cup
  7. Baking soda - 1/2 tsp
  8. Lime juice - 1 tbsp
  9. Salt - to taste
  10. Red pepper flakes - 1/2 tsp
  11. Crushed pepper - 1/2 tsp
  12. Cumin - 1/4 tsp crushed

Method:
Gently mix all the ingredients together .Do not knead to form a dense mass- use a light touch and mix it gently so that the meat stays loosly packed and airy.
Refrigerate for 2 hours.
Heat a cast iron pan or your grill to a medium high heat .
Form the meat mixture into sausage shaped rolls and saute/grill for 4 to 5 minutes until cooked.
If you are sauteing you would not need to add any oil since the ground meat will have some fat which will help cook it.
Serve with salad, french fries or Pita bread and yogurt dipping sauce.
