Egg Burji



















Ingredients:
  1. Eggs - 5
  2. Onion - 1 chopped fine
  3. Tomato - 1 big chopped
  4. Green chillies - 2 chopped into rings
  5. Coriander powder - 1.5 tsp
  6. Chilly powder - 1/2 tsp
  7. Oil - 2 tbsp
  8. Salt - to taste
  9. Pepper powder - 1/4 tsp
  10. curry leaves - 1 spring

Method:
Heat oil in a nonstick pan and  stirfry the chopped onions until soft.
Add the coriander and chilly powder and stirfry for a minute
Add in the chopped tomatoes,curry leaves and green chilies and salt to taste and fry until the tomatoes are cooked.
Push the mixture to the side of the pan and add 1 tbsp of oil in the center .
Break the eggs into the center and sprinkle salt and pepper to taste and scramble it .
Bring the whole mixture together and stir fry until it is dry.
