Ingredients:
- Russet potatoes - 3 medium washed and scrubbed .
- Butter - 4 tbsp
- Half and half OR Cream OR Whole milk - 1/4'th cup
- salt - to taste
- fresh cracked pepper - 1/4 tsp
Bake the whole potatoes in a 400 degree oven for 30 minutes or until it is cooked well.
Cut the baked potatoes into half horizontally and scoop out most of the flesh into a dish and keep the potato jackets aside.
Mash this along with 3 tbsp butter and the half and half.
Add salt and pepper to taste.
Spoon the mashed potato mixture back into the potato skins and top with a pat of butter.
Broil or bake until it is warmed well.
Garnish with dill if desired.
Serve as a side dish with Grilled,baked or broiled Chicken or Fish.
