Masala Dosa



Ingredients:
  1. Urud dal - 1 cup soaked in water for 5 hours
  2. Rice flour / Rice - 3 cups (If using rice Soak in water overnight)
  3. methi seeds - 1/4'th tsp soak with urud dal(optional)
  4. Salt - to taste
For Masala:
  1. Potatoes - 3 boiled and skin removed
  2. Green chillies - 4 slit
  3. curry leaves - 1 spring
  4. Onion - 1 chopped fine
  5. turmeric powder - 1/4 th tsp
  6. Oil - 2 tbsp
  7. Salt - to taste
  8. Lemon juice - 1/2 tsp

Method:
Preparing the batter:
Grind the Urud dal with minimal water until it is fluffy.
Grind the soaked rice well( it is okay if it is a bit coarse).
If you are using rice flour mix the urad dal batter and rice flour with enough water to form a thick batter.
Mix the dal and rice batter with salt and keep in a covered vessel to ferment.
I usually leave it overnight to ferment .

Preparing the Masala:
Heat oil in a pan and saute the onions ,curry leaves and green chillies.
When it is cooked add in the turmeric powder and saute .
Add in the boiled potatoes and salt and coarsly mash the potatoes with the back of a spoon.
Add lemon juice to taste.
Keep the masala aside.

Make thin Dosas and add the masala inside it and roll it .
Serve with Chutney and sambar.
