Chicken Varutharachathu



Ingredients:
  1. Chicken - 1 medium sized cut into small pieces
  2. Grated coconut - 1/2 cup
  3. Garlic - 1 pod chopped
  4. Ginger - 1 inch piece chopped
  5. Meat masala - cardamom,fennel,pepper,cinnamon and cloves
  6. Vinegar - 3 tsp
  7. Onion - 2 sliced fine
  8. Coriander powder - 3 tbsp
  9. chilly powder - 2 tsp
  10. Turmeric powder - 1/2 tsp
  11. Oil - 5 tbsp
  12. Curry leaves - 2 springs
Method:
Add 3 tbsp of oil in a pan and fry the grated coconut with the chopped ginger and garlic until light brown .
Add in the meat masala and fry for few more minutes.
Reduce the flame and add the chilly and coriander powder and 1 spring of curry leaves and fry until the raw smell of the powder is gone.
Grind this into a smooth paste with a little water and keep aside.
Add remaining oil into a pan and saute the sliced onions with salt until it is light brown .
Add in the ground paste and vinegar and saute for few minutes.
Add the chicken pieces and mix well.
Cover and cook until chicken is cooked and gravy thickens.
Add the remaining curry leaves and mix well.
