Stirfried Chinese Okra and Toor dal
Ingredients:
Chinese Okra - 1 medium sized cut into small pieces
Toor Dal - 1/2 cup cooked (do not overcook)
Grated coconut - 1/2 cup
Shallots - 4
Green chillies - 5
Curry leaves - 1 spring
Turmeric powder - 1/4'th tsp
Salt - to taste
Garlic - 1 clove
Oil - 1 tsp
Method:
Heat oil in a pan and add the mustard seeds. When it splutters add the curry leaves and the turmeric powder ,chopped onion,green chilly and garlic.
Stir fry for a minute. Add in the chopped vegetable and stir fry for 2 minutes.
There is a lot of liquid in Chinese Okra , so You may have to stir fry in an open pan until most of the water evaporates.
Add salt to taste , cooked Troor dal and grated coconut Cover and cook for an additional 2 minutes until the vegetable is cooked .
