Singapore Noodles

Rice vermicelli are thin noodles made from rice, sometimes also known as rice noodles or rice sticks.Rice vermicelli are a part of several Asian cuisines, where they are often eaten as part of a soup dish, stir fry, or salad. It is particularly prominent in the cuisines of South India ,Sri Lanka,China, Taiwan and Southeast Asia.


Singapore Noodles is a really easy dish to prepare and the best part is that it takes less than 10 minutes to cook the whole thing .If you forget to soak the noodles before hand you can wash well in hot water and cook for maybe 4 minutes or so and it is done.


Ingredients:
  1. Thin rice noodles - soaked in hot water for 30 minutes.
  2. veggies of your choice - beans, carrots,bell peppers,cabbage,mushrooms etc.
  3. curry powder - it can me anything from a mixture of corriander,chilly and turmeric powder to meat,or egg or vegetable masala.
  4. Eggs - scrambled
  5. Meat or Shrimp (optional) - stir fried with curry powder and soy sauce.
  6. Oil
Method:

Soak the rice noodles in hot water for 30 minutes and drain and keep aside.
Heat oil and stir fry the veggies until just wilted,add in the masala and stir well.
next add in the soaked rice noodles and add enough salt and cover and cook for 2 or 3 minutes until the water clinging to the noodle is gone.
You could add scrambled egg , sauteed shrimp or chicken for a non vegetarian option.
