Chicken Fry /Kozhi varuthathu



Ingredients:
  1. Whole chicken with bones cut into smallish pieces - 1
  2. Chilly powder - 2 tbsp
  3. Turmeric powder - 1/2 tsp
  4. Ginger garlic paste - 1 tbsp(you can use finely chopped ginger and garlic instead)
  5. Vinegar - 2 tbsp
  6. Salt- to taste
  7. pepper powder - 1/2 tsp
  8. Curry leaves - 5 springs
  9. Oil - to shallow fry
Method:
Make a thick paste of chilly powder,turmeric powder,salt,vinegar , pepper powder and ginger garlic paste.
Marinate the cleaned cut drained chicken pieces with this paste for few hours or even overnight.
Heat oil in a nonstick pan and shallow fry the chicken pieces until browned and cooked.

If you are using broiler chicken you can fry the chicken straight.If you are using chicken that takes longer to cook you can precook the marinated chicken until the juices evaporate than then proceed to fry it.

  5. you mean meat masala ? if you want to you can add it , but the fry tastes good even without adding any extra masala.
