Ingredients:
- Asparagus - 1 bunch cut into small pieces
- Grated coconut - 1/2 cup
- Shallolts - 3
- Green chillies - 5
- Curry leaves - 1 spring
- Turmeric powder - 1/4'th tsp
- Salt - to taste
- Garlic - 1 clove
- Oil - 1 tsp
Crushthe grated coconut,green chilly,garlic,turmeric and shallots together for 30 seconds in a food processor ,just to get it mixed together.
Heat oil in a pan and add the mustard seeds.
When it splutters add the curry leaves followed by the chopped asparagus.
Add salt to taste and the coconut mixture and stir fry in an open pan for 2 minutes.
Cover and cook for an additional 2 minutes.
Tip :Asparagus should not be overcooked .It will be perfectly done in a max of 5 minutes.
